With a Cherry on Top

Boston Apothecary wrote a post today outlining a course that is apparently offered at Oregon State University which demonstrates how maraschino cherries are made. There’s some great info here including a link to a masters thesis from 1995 on making maraschino cherries.  In it the author tested using radish extract as a replacement for FD&C Red No. 40 as the colorant of the cherries.
